It's just that time of year when the weather starts to get a little chillier and I get the urge to COOK. I love cooking and baking and trying new and healthy recipes.
I found this one in my favourite cookbook "Anne Lindsay's Lighthearted at Home" and decided to give it a try... who doesnt love ginger, lime, coconut milk and cilantro all in one recipe!
Sweet potato and Ginger Soup.
INGREDIENTS and Preparation.......
I gathered my ingredients and got down to peeling and chopping the sweet potatoes and grating the ginger.
I put the chopped potatoes and ground ginger in a pot along with vegetable broth and let them simmer until soft.
And kept an eye on it as to not burn anything!
The next step got a little messier. The softened potatoes had to be blended and since I have an 80 year old blender, it was a bit of a process....
BUT once blended, I put the soup back into the pot and added the yummy ingredients: Lime juice and coconut milk! (and some salt and pepper!)
Enjoy it with friends! yummmmmmm
